Pumpkin Recipe of the Day: Pumpkin Protein Balls

  • 1 cup pumpkin puree
  • 1.5 teaspoons pumpkin pie spice or cinnamon and clove
  • 1/2 cup almonds
  • 1.5 cups old fashioned oats
  • 1/2 cup flax or chia seeds
  • 1 tablespoon honey
  • 1 scoop of Vegan protein powder (optional)

Combine all ingredients in food processor and blend.  Scoop and roll into balls, refrigerate for 2 hours, and enjoy!
