Recap of the Healthy Living Festival in Photos

Here is a recap of the Annual Healthy Living Festival that takes place at the Del Mar Fairgrounds in San Diego County.  I am a little late, the event was a couple weeks ago, but I finally finished downloading all of my photos.  There were lots of vendors with great products, cooking demos, speakers, and yoga and qigong classes.  I even learned qigong.  Arctic Zero was one of the vendors.  I don’t have a photo of their booth: however, their products are awesome.  Their booth was always busy since they were giving away free samples of gluten-free, soy-free, and dairy-free, and low glycemic frozen desserts!

Enjoy browsing through the photos.

Healthy Cooking Demo by Cooking 4 Life

Cooking 4 Life showed how to prepare a tasty vegetarian lasagna in 5 minutes and cook it in 20 minutes plus a 5-veggie salad with citrus dressing. She showed you how to get in and out of the kitchen in 2/3 less time with 2 to 3 times the nutrition.  No more overcooking the nutrients out of your food!

Made more raw cacao balls

I’ve been tossing the idea of adding more superfoods to my raw cacao balls.  This time I added spirulina, chia powder, maca powder, goji berry powder, raw cacao nibs, and organic shredded coconut to my recipe. This is a good healthy day or evening snack. And tasty too!  I brought them to work and my coworkers loved them!

The ingredients are:

  • 10 medjool dates
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1/2 tbsp coconut oil
  • 1 tsp NutriBullet superfood powder (maca, chia, goji, and raw cacao)
  • 1 tsp raw cacao powder
  • 1/4 cup raw cacao nibs
  • 1 tsp spirulina powder
  • 1/4 cup shredded coconut – optional

Blend everything together in a NutriBullet until well blended. Shape in the form of balls or brownie.  Roll balls in coconut or top brownie with coconut.

1/4 cup Almonds

1/4 cup Cashews

10 Medjool Dates (seeds removed)

1/2 tsp Raw Cacao Powder

1 tsp NutriBullet Superfood Boost (Chia, Goji Berry, Cacao, and Maca Powder)

1 tsp Coconut Oil

1/2 cup shredded organic coconut

Mix all of the ingredients except coconut together in a blender for about a minute – which should create a sticky, thick consistency. Once blended, remove blended ingredients to a plate.  Shape in the form of balls or pour ingredients into a square baking dish and shape as a brownie.

Roll balls in shredded coconut or pour shredded coconut over brownie mix.

Optional:  top brownie with sliced fruit and refrigerate.

Makes the perfect dessert or afternoon snack!  Enjoy and let me know what you think!
