San Diego Gluten Free and Allergen Friendly Expo – February 7, 2015

Heppy Thursday! I am really excited that I am an official blogger for the San Diego Gluten Free and Allergen Free Expo.  The SDGFAF Expo is February 7 at the Del Mar Fairgrounds.  I am looking forward to report back the latest information in gluten-free products and information related to gluten sensitivity and gluten-free tips for baking and cooking. Also looking forward to networking with others in the Gluten-Free community.  Stay tuned!

Made more raw cacao balls

I’ve been tossing the idea of adding more superfoods to my raw cacao balls.  This time I added spirulina, chia powder, maca powder, goji berry powder, raw cacao nibs, and organic shredded coconut to my recipe. This is a good healthy day or evening snack. And tasty too!  I brought them to work and my coworkers loved them!

The ingredients are:

  • 10 medjool dates
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1/2 tbsp coconut oil
  • 1 tsp NutriBullet superfood powder (maca, chia, goji, and raw cacao)
  • 1 tsp raw cacao powder
  • 1/4 cup raw cacao nibs
  • 1 tsp spirulina powder
  • 1/4 cup shredded coconut – optional

Blend everything together in a NutriBullet until well blended. Shape in the form of balls or brownie.  Roll balls in coconut or top brownie with coconut.

Raw Cacao Superfood Balls

This is the perfect late night dessert for the chocolate lover! It’s raw, vegan, dairy-free, and gluten-free – a healthy option for the entire family!  Without the guilt!

The Raw Cacao Superfood Balls are simple, inexpensive, and only takes five minutes to prepare.

Ingredients:

1/4 cup Almonds

1/4 cup Cashews

10 Medjool Dates (seeds removed)

1/2 tsp Raw Cacao Powder

1 tsp NutriBullet Superfood Boost (Chia, Goji Berry, Cacao, and Maca Powder) 

1 tsp Coconut Oil

1/2 cup shredded organic coconut

Mix all of the ingredients except coconut together in a blender for about a minute – which should create a sticky, thick consistency. Once blended, remove blended ingredients to a plate.  Shape in the form of balls or pour ingredients into a square baking dish and shape as a brownie. 

Roll balls in shredded coconut or pour shredded coconut over brownie mix.

Optional:  top brownie with sliced fruit and refrigerate.
